My Chef loved this southern fried chicken recipe so much, he wanted to have it everyday. I can say that I wouldn’t mind because it’s just that delicious!!
You'll feel the same way too. The seasonings give this special recipe a nice little zing to it. The best part is it’s super easy to make. This gives you enough time to do other things - like making side dishes or just taking a little time to relax after a busy day.
This is great for get togethers too, just because you can make with very little fuss. I warn you though: make sure to double up on all the ingredients because I can guarantee you your guests will ask for seconds!
4 chicken breasts
¼ cup of low-fat buttermilk
¼ teaspoon of hot pepper sauce
3 tablespoons of flour
3 tablespoons of breadcrumbs
¼ chopped parsley
1 teaspoon of salt
Ground red pepper to taste
2 tablespoons of oil
Preheat the oven to 190°C/375°F. Set aside a large baking dish to hold the chicken parts.
Wash chicken breasts thoroughly. Dry with paper towels. Place them on plate that can hold excess liquid without spilling over.
In a bowl, mix the buttermilk with the hot pepper sauce.
Pour the buttermilk and sauce mixture over chicken breasts, turning each to cover evenly.
On a flat dish we’ll prepare the coating. Pour the flour, breadcrumbs, parsley, salt and ground red pepper over the dish. Mix well.
Coat each chicken breast on both sides with the mixture.
Pour the oil in a large skillet over medium heat.
Add the breasts and sauté one side until it's a lovely golden brown colour (about 3-5 minutes). Turn over to the other sides and repeat.
Place the fried chicken in the baking dish and bake for 30 minutes or until it's nice and crispy.
