This shredded chicken sandwich recipe fits the bill perfectly!
It’s versatile too...
That’s a lot of qualifications for just a sandwich, right? So let’s go over some of the reasons why this particular recipe has earned its place on my site.
First, the combination of ingredients in this sandwich make it special. It’s very simple, and so, nice and light, just like I promised. A selection of a few olives, garlic, and basil, enhances this meal into a very delicious taste treat.
Second, I mentioned versatile. Did I say party on?!
Party is right. For larger get togethers, you can double up or triple up the ingredients.
And, this is great for picnics with your loved ones. It’s great just for school. Or work. Or just when you are hungry! Right?! :)

200 g shredded chicken
2 tablespoons of green olives
2 tablespoons of pitted black olives
1 clove of garlic
1-2 tablespoons of mayonnaise
6-8 slices of bread
Salt and pepper to taste
2 tablespoons of fresh basil chopped
Wash tomatoes and olives well, and dry on paper towel.
Chop the olives and garlic. Dice the tomatoes. Combine everything with mayonnaise. Add the basil. Season with salt and pepper.
That’s our spread.
To make the sandwich - simply spread mayo mixture onto two slices of bread. Layer the slices with some of the shredded chicken. Close sandwich. That’s it. We’re done!!

This shredded chicken sandwich is very light and delicious. But if you’re really hungry, or just want some variety you can add a slice of cheese of your choice. And for a real hearty meal, throw in some fresh lettuce.
