This tropical pineapple chicken recipe is the bomb! Super simple; super quick! And with the exotic flavor of pineapple to boot.
With less than half an hour of prep time, half of that time is spent baking in the oven. That means a little more time for you! Or preparing side to dishes to go with this meal.

4 boneless, skinless chicken breasts
1 medium can of pineapple chunks
4 tablespoon honey
2 teaspoons curry powder
1 teaspoon Tabasco sauce
1 tablespoon water
cayenne pepper to taste
salt and pepper to taste
Preheat the oven to 250°C/480°F.
Wash the chicken breasts thoroughly. Dry with paper towels. Season with a touch of salt and pepper for taste..
Cut them into small bite size pieces. Then place into a baking dish.
Drain the pineapple chunks, but reserve a ½ cup of the juice.
In a saucepan over medium heat, mix together the pineapple juice, honey, curry powder, tabasco sauce and water together.
This next step is very important:
Because of the honey, there is a tendency to burn very easily if left alone. Let the mixture simmer for about the next 5 to 7 minutes. But make sure to stir often to prevent any mishaps!
Next, stir in the pineapple chunks. Continue to simmer everything until the sauce has thickened. Now it’s ready! Pour the pineapple and sauce mixture over the chopped chicken breasts in the baking dish.
Place the baking dish in the oven (preheated at 250°C/480°F).
Bake for about 15 minutes. Check often to avoid burning. The chicken should a beautiful golden color.
