A Mac and Cheese Recipe

Who doesn’t love a mac and cheese recipe? Especially the little ones.

Kids love simple meals. Grown ups sometime forget this! And mac and cheese recipes are as simple as they can get.




Of course, they’re not too healthy day in and day out. So I’ve added a little variation: some peas - which really is a favourite with a lot of kids because they’re a nice tiny vegetable. I’ve also added some sliced tomatoes. This adds a really nice colour to the dish.

Of course, no recipe is complete on this site without a little chicken! (This might make up for the tomatoes!)

Ingredients (Serves 2 Macaronis):

2 grilled chicken breasts, cut into ‘kid-sized’ chunks
20g of fresh peas
200g macaroni
25g butter, plus extra for baking pan
25g flour
450 ml whole milk
pinch of nutmeg
½ tsp mustard powder
50g grated cheddar
1 tbsp grated Parmesan cheese
bread crumbs
1 tomato sliced
salt and pepper to taste
dried parsley

Directions:

Bring 5 cups of water to a boil. Add one teaspoon of salt. Add the macaroni and cook until tender - about 7-8 minutes.

While preparing the macaroni, shell the peas and add to the macaroni.

Meanwhile, melt 25 g of the butter in a pan, and stir in the flour using a whisk. While stirring gradually add the milk until you have a smooth sauce.

Continue for a few minutes until it thickens, then add the nutmeg and mustard.

Stir in the cheddar until smooth.

Take off the heat, and season with salt and pepper to taste.

Preheat the oven 180°C/350°F.

Drain the macaroni and rinse under cold running water. Set aside in the pot.

Line a baking dish with melted butter. Then combine the grilled chicken bits, pasta, and cheese sauce and pour into the baking dish.

Melt the remaining butter in a pan over medium heat and then toss it together with the breadcrumbs and parmesan cheese until the cheese is melted.

Spread over the top of the macaroni in the baking dish, and then arrange the sliced tomatoes on top. Sprinkle with parsley.

Bake for about 20 minutes until golden and bubbling.

Allow to stand for five minutes before serving.
