Chicken Lomo Saltado

The inspiration for this chicken lomo saltado recipe came from my friend Javier.

He loves crispy chicken with fried potatoes! Javier says: “Lomo Saltado is the food I like to eat and cook.”

It is a very popular dish in Peru. So Javier was happy to share with us. Hope you will enjoy it too.

It’s very simple and delicious.

Ingredients (Serves 3-4 lomos):

500 g of cooked chicken
3 onions, cut in strips
1 - 2 tablespoons of oil
2 tomatoes
1 yellow pepper
1 - 2 cloves of garlic
1 tablespoon of chopped parsley
Salt and pepper to taste
1 large potato; French fried


Wash and peel tomatoes; cut into large pieces.

Wash yellow pepper and cut into strips.

Cut cooked chicken into small strips and sautée in oil until nicely browned.

Add all these ingredients: tomatoes, onions, pepper, and some parsley, with salt and paper to taste. Continue to sautée until everything is tender and gets a beautiful golden colour.

Peel potato and wash it. Cut into long pieces and fry.

My Chef's Tips:

Serve with cooked rice.

The best way to serve this is to spread the stir fry all over a plate, top the middle with the rice, and decorate all around the side with the French fried potato!

Then sprinkle with some extra chopped parsley :)
