1 Chicken
2 cloves garlic very finely sliced
1 lemon
Sprigs of rosemary
2-3 tablespoons of extra virgin olive oil
Salt and pepper to taste
Preheat the oven to 180°C/350°F.
Wash and dry your chicken well.
First cut the backbone out of the chicken. Then press it flat down on the cutting board.
Cut a hole in the skin on either side of the breast bone, bend the "knee" and slip the leg bone into the hole. You now have a nice ready-made ‘presentation’ setting once the chicken is finished and on your dinner table..
Carefully place the chicken in a baking dish.
Lift up the breast skin from the chicken and slide in the very thin slices of garlic. Then add the most important ingredient: a few sprigs of rosemary needles. Need I say that fresh rosemary is the absolute best here, Chef?
Coat all the chicken on every side with the olive oil. Sprinkle with just a tiny bit of salt and pepper. it will give the special flavour too.
Cut the lemon in half. Squeeze the lemon over the chicken, delicately drizzling the entire chicken with the juice.
Like I said before, when this gets baking your house will smell fantastic! Of course, best of all, the chicken will taste great!
Place the chicken in the dish with the skin side down and bake for about 20-30 minutes. After that time, turn the chicken over, raise the oven temperature to about 200°C/400°F to brown the skin and continue baking until done.
Baste frequently with the juices about another 20 to 30 minutes. But before you finish....

For the last 20-30 minutes of cooking, add some partially cooked potatoes, sliced into quarters. Baste them too along with the chicken, for a delicious side dish!
