This Lemon Chicken Pasta is a refreshing and energizing change for two!

Why?

Because of the lemons! Lemons have a nice healthy dose of vitamin C. That's good in my books.




So here I have a tempting dinner for you that will spice up a quiet evening with your special loved one! Unless you're like me and only have a Chef....

But anyway!

Lemon juice is what gives this recipe its wonderful freshness! And it just tastes great.

Let's get started. Just check all your ingredients and enjoy!

Ingredients (Serves 2 Lemons):

2 skinless boneless, chicken breasts
2 tablespoons of flour
2-3 tablespoons of oil
1 large garlic clove, chopped
1 bay leaf
1 teaspoon of fresh ginger
2 tablespoons wine
1 tablespoon of honey
1 teaspoon chili powder
½ cup of lemon juice
200 g of pasta
6-8 broccoli florets
½ cup baby carrots
Salt and pepper to taste


Directions:

Wash the chicken breasts thoroughly. Dry with paper towels.

Season the chicken breast on both sides with salt and pepper - just enough to taste. Roll the chicken breasts with flour until evenly coated.

Heat oil in a medium skillet. Add the garlic and sautée over medium heat for 1to 3 minutes.

Add the chicken, bay leaf, and ginger, and continue to sautée for about 2 to 3 minutes on both sides, until they get a nice golden color.

Add the wine and honey, and simmer at medium heat for around 10 to 12 minutes.

Add the chili powder, and then stir in the lemon juice. It’s best, by the way, when you squeeze it yourself, fresh!!!

Simmer for another 5 to 10 minutes.

In the meantime, prepare the pasta according to directions on the box. Drain when done.

Cook the broccoli and carrots by boiling in 4 cups of water for 5 to 7 minutes. Drain when done.

Remove the chicken with a slotted spoon and set aside.

Strain the “bouillon” and reserve it. Discard the bay leaf.

Return the liquid to the pan. Cook on a low heat for 15 to 20 minutes.

My Chef's Tips:

Serve this lemon chicken pasta by placing some of the freshly cooked pasta in a bowl. Follow this with the broccoli and carrots. For younger kids, you may want to cut the chicken into bite size pieces and adding it with the vegetables. Garnish with some nice lime wedges!

And of course, a salad on the side!
