What's so great about my easy chicken pasta recipe?!
It's fast.
It's Fun.
And my Chef doesn't like it!!
What?! Why wouldn't he like my recipe?
Simple: he doesn't like sour cream!
And you know what? I don't care!! I pay him no mind.
Not only is this recipe fast and fun, it's simple! And it comes with lots of lovely colors. And an elegant variety of ingredients.
2 garlic cloves, chopped
fresh basil
1 red pepper
150 g chicken breasts
5-6 tablespoons of oil (your choice)
5-6 tablespoons of sour cream
2½ cups of penne pasta
grated cheese
5-6 mushrooms, sliced
salt and pepper to taste
parsley
Begin by preparing your penne pasta according to the package directions.
Use
water of course. Believe it or not, my Chef didn't know this at one
time. But now he does. Otherwise he wouldn’t be allowed in my kitchen!

When cooking the pasta add just a little bit of oil to prevent sticking, and a bit of salt.
While the pasta is cooking, wash and cut the red pepper into thin strips.
Wash the chicken breasts thoroughly and dry with paper towels. Cut the chicken into cubes.
Place
a pan over low to medium heat. Add 2 to 3 teaspoons of oil. Next add
the pepper, chicken breasts and sliced mushrooms. Sauté until everything
is just tender.
Chop some basil and sprinkle over the sauteing pepper and chicken mixture.
Next mix in the sour cream. Season with just a little salt and pepper to taste.
Cook for about one more minute. After this time your pasta should be done. If not, set the mixture aside for a moment and keep warm.
After the pasta is finished, add it to the chicken, pepper, and mushroom mixture and cook for one more minute, still over low to medium heat.
Serve on a plate and sprinkle with cheese - garnish with parsley.
