Want easy Chicken Breast Recipes for those long, lazy summer days when folks just start dropping by for no reason?

Especially on those nice, long 3-day holiday weekends that happen so frequently in the summer?

Well, I've got a super, great barbecue treat right here.




BBQ Chicken Breast

What makes it so great?!

You can make more by just doubling or tripling the ingredients as you need.

You can make extra and store the left overs in your fridge or freezer just to be ready.

But my favorite reason is the spices.

The spices are what give this barbecue chicken recipe a unique taste!

In fact, one time when I was serving this for my friends and their family, their kids would only eat the chicken breasts and nothing else...

And you know kids, don't you? Hard to please - right?

So here you go!

Ingredients (Serves for 4 Chicken Breasts!):

800 g chicken breasts
2 cloves garlic
2 tablespoons olive oil
Juice of 1 lemon, freshly squeezed
Grated rind of one lemon grated
Red pepper powder to taste
1 tablespoon chopped parsley,
Between 10-14 Skewer Sticks
Salt and pepper to taste

Directions:

Wash the chicken breasts thoroughly. Dry with paper towels. Then cut them into long strips. They should all come out to about 10 to 14 strips.

Peel and chop the garlic into small pieces. Or, if you like, you can crush it instead.

In a bowl mix olive oil with lemon juice, add the garlic and grated lemon rind. Season to taste with salt, pepper, red pepper, and the chopped green parsley.

Coat over chicken breast strips and set aside for 2-3 hours in a cool place.

Moisten skewer sticks with water, and stick into chicken strips. BBQ on the grill for about 10 minutes, on both sides, until we get our usual golden colour!

Crispy outside, soft and light inside! Right, Chef?
