Here’s a chopped chicken liver feast for those who are tired of simple liver!
Because I grew up on a farm, I've always had really fresh chicken livers. I didn't really need much variety then.
However, as the old saying goes: "Variety is the spice of Life!!"
And many people simply thrive on variety. So I'll share with you another simple way to add some to your home made meals.
So....What's the difference between just regular and chopped livers?
First: it definitely will cut down on your cooking time! (My Chef likes that one)!
And
Second: when you chop them, you have more juices coming out. So immediately you have an extra "gravy" that adds a lovely, wonderful flavour to your dish.
How's that?!
This is a colorful, healthy treat that should make converts of everyone!
Even those who say they hate chicken liver - like my friend, Anthony. "How dare you!...to not like liver! ;)
OK Chef...so I'm very biased! ;)
500 g of chicken liver
2 tablespoons of butter
2 medium onions
4 mediums mushrooms
2 medium tomatoes
2 cloves garlic
salt and pepper to taste
1 tablespoon of parsley finely chopped
Rinse livers well under running water.
Chop them into small strips or pieces. Sautée in butter.
When almost finished, add some salt and pepper to taste.
Wash the tomatoes and dice them.
Wash the mushrooms and dice them too. Set aside.
Peel and wash the onion, and cut into small pieces. Sautée onion over low heat.
Smash the garlic(!)and add it, along with the
mushrooms and diced tomatoes, to the chopped livers. Season again with
salt and pepper to taste.
Sprinkle everything at the end with fresh, chopped parsley.
Serve with a luscious green salad and lots of your favourite vegetables.
