Chicken Sandwich Recipe!


This chicken sandwich recipe is fantastic!

My favorite part is the cheese! If you have kids, this will be a winner. My Chef loves this recipe - does that tell you something?!

I tell you something:...

I think this is a very healthy alternative to your standard grilled cheese variety!

Another thing you’ll love about this recipe is there’s two ways to make it: oven and stove top. Try it out for yourself right now!!...

Ingredients (Serves 2-4 Sandwiches):

6-8 slices of smoked chicken
One loaf of bread cut into slices about 2 cm thick (6-8 slices)
Handful of basil leaves
2 small zucchini, sliced
6-8 slices of ham
2-4 slices of cheese of your choice
Parsley finely chopped

Directions - Oven Method:

Make sure your rack is centred vertically in the oven: not too close to either of the heating elements. This is to prevent your sandwich from burning.

Preheat the oven grill to 250°C/480°F. You may need to lower this later to make sure the bread won't burn.

Lay out a bread slice. Trim the crust...this step is optional...small children sometimes won't eat if they see the crust!!!

Cover bread with basil leaves, then top with an even layer of zucchini.

Then alternate with chicken and ham slices, but lay them down in a wrinkly fashion!

Add a cheese slice.

Add some chopped parsley for colour and taste!

Cover everything with a second slice of bread.

Now place the sandwich in the oven grill.

Heat for 3 to 5 minutes: When cheese is melted, and the bread is a golden brown colour, it's ready!

Directions - Stove Top Method:

If you don't want to use the grill, you can use a heavy stove top pan. It will work just as well and could be less messy!

To start, heat a large skillet over medium to high heat. Butter the outsides of the sandwich first. Then follow the steps above to put together your sandwich.

When done, place it in the pan. Heat on both side for 2-3 minutes each until the cheese is melted and the breaded is nicely toasted.

My Chef's Tips:

Serve immediately.

Sandwiches can be fantastic meals in themselves when you make it like my chicken sandwich recipe! But some side accents like cherry tomatoes and small cucumbers, makes everything just a bit more fantastic!
