Chicken Marinade Recipe

This chicken marinade recipe is the perfect treat for summertime.

It uses chicken drumsticks, so it’s a great finger food. This makes it especially popular for your kids (and My Chef!). It’s because they both just love to eat with their hands - right?! The touch of honey gives it a hint of sweetness they’ll love too.




The best part about this recipe is it’s so easy to make. That’s right: you don’t have be a Cordon Bleu chef. (Sorry Chef...and go wash your hands!)

You can make this for anyone, anytime, anywhere!!!

But let me give you one of my Chef’s tips right now. You’ll want to double or triple the amount of ingredients. Whether you’re serving a large gathering or not, you’ll be asked for seconds!

Ingredients (for 4 drumsticks):

4 chicken drumsticks
500 g potatoes
1 medium onion
3 tablespoons oil
200 ml vegetable broth
1 tablespoon honey
1 tablespoon lemon juice
400 g green olives
A pinch of chili
A pinch of parsley
Salt and pepper to taste

Directions:

Wash the drumsticks thoroughly. Dry with paper towels and set aside.

Wash and peel the potatoes. Cut into large cubes.

Peel and rinse the onions. Chop into small pieces.

Place the chicken, the potatoes and the chopped onions into a large pan. Drizzle everything with just 1 tablespoon oil to get everything coated.

Sprinkle with a little salt and pepper to taste. Pour in just 150 ml of the vegetable broth. Sautée over low to medium heat for 15 minutes.

After these first 15 minutes are done, turn over the drumsticks and pour on the rest of the vegetable broth. Saute for another 15 minutes.

While that’s going on, we’re going to prepare the marinade. Mix the honey, the lemon juice, the rest of the oil, the chili and parsley in a separate bowl.

Back to the stove!...

Remove the pan from heat. Smear the chicken with the marinade by pouring it over and turning the drumsticks at the same time to get them evenly coated. Add the olives to the pan..

Return the pan to the stove and cook on low for a final 10 minutes.

My Chef's Tips:

To keep with the simple children’s theme for this chicken marinade recipe, serve with green beans and a little tomato salad on the side.
