Here's a very lovely chicken and rice soup recipe to tantalize your taste buds.

This wonderful chicken recipe is very simple to make too!

If you go past the directions to my Chef’s tips, you’ll see you have a chance to get very creative with this tasty dish.

This is definitely going to be a favorite you'll want to make over and over again - and in new and exciting ways.

Ingredients (Serves 4 rice soups!):

500 g chicken wings or chicken breasts for broth

1 chopped carrot
150 g of rice
150 g sliced mushrooms
1 onion
1 tablespoon butter
3-5 bay leaves
3-5 cloves of allspice
dill for sprinkling
green parsley
Salt and pepper to taste
Optional: 1 chopped parsley root

Cooking Utensils You'll Need:

2 large cooking pots
cooking spoon
kitchen knife
chopping board
measuring spoons

Directions for Chicken and Rice soup recipe:

Wash the chicken thoroughly. Clean and dry the chicken with paper towels.

Place the chicken in a large cooking pot. Pour about 3 litres of cold water over chicken.

Next, add the allspice and bay leaves. Cook over low heat.

Add the chopped carrots. Adding them first helps soften them while we prepare the next step.

Chicken Broth is Starting!

In a separate cooking pot, cook the rice according to package directions. Also, add the 1 tablespoon of butter. (Add a little bit of salt if, and only if, it’s not already added). Remove from heat when done. Keep warm.

While the rice is cooking, let's get back to our soup. Add the mushrooms and sliced onion to the chicken soup. (Here, also, is where you can add the chopped parsley root if you’re using it, and any other veggies you might like - see my Chef’s tips below).

Chop the dill and add to soup. Season with a dash salt and pepper.

Important: be sure to leave the rice and soup in their separate pots. You’ll find out when we serve this! But first...

My Chef's Tips:

You can also add other spices: things like Vegeta seasoning or a few drops of Maggi.

You can add or substitute your choice of veggies: chopped broccoli or celery. It all depends on your taste!
