I love chicken and mushroom recipes! Don’t you?!
I also love onions and garlic - which you may have noticed from the other recipes on my site!!
So I came up with an idea.....
I remember my mom making a great sauce when making our chicken dishes. It came from the juices created by sauteing the chicken itself and adding onions, garlic and mushrooms.
Mmm!! It was sooo yummy.... I’m getting hungry thinking about! So I better tell you how to make this.
I wanted to make this very easy to make because after all it is an easy chicken recipe site! And if you look at the ingredients you’ll see the list is short.
And you can get creative too: you can substitute the seasonings for your own favorites.
Wait ‘til you taste the sauce!...The flavor is rich and amazing. The mushrooms are tender!
This is one of my easiest chicken and mushroom recipes. And I’m sure it’s going to be one of your favorites too.
4 boneless skinless chicken breasts
1 medium onion
3 tablespoons butter
5 mushrooms – sliced
1/2 Cup of Chicken Broth
100 g of sour cream
1 clove of garlic - chopped
100 grams of cheese - grated
garlic and pepper seasoning
salt and pepper to taste
Rinse the onion with water. Dry with paper towels. Peel the outer layer. Slice the rest of the onion into thin rings.
Place the butter in a pan and place on medium heat. Sauté the onion rings until they get a nice golden brown color. This should take only 4-5 minutes. When they are done, remove from heat, cover and set aside to keep warm.
In another medium pan, heat some oil over medium-high heat.
Wash the chicken breasts and dry off with paper towels.
Season them with some salt, pepper, and vegeta seasoning.
Place the chicken breasts in the pan. Sauté on both sides, over low to medium heat.
We’re going to do two things: We’re going to lightly brown the chicken on both sides.
We’re also going to save the juices from this - so watch carefully!
In another pan add the sour cream. Mix in a bit of the chicken juices and stir well over low-to-medium heat.
To this add the sliced mushrooms, garlic, and a little salt and pepper. Reduce heat to low and let simmer for 10 minutes. Add some more chicken juices if the mixture becomes too dry.
While simmering, lightly add some of the vegeta seasoning and a touch of the garlic and pepper seasoning.
Next, add the chicken to the pan. Turn the heat back up to medium and sauté for about about 10 more minutes until the chicken is cooked thoroughly.
Remove the chicken breasts from the pan and place on a large plate. Keep warm.
Add the cheese and caramelized onions to the sauce. Continue stirring and simmering until the cheese is completely melted in.
I like serving this with potatoes - baked, boiled or mashed. Green beans go nice with this too. But as you can see from these pictures this time I added another side dish instead. Delicious!
I always start with salad - one guess what the main ingredients were!
To serve, cover the chicken breasts with the mushroom and cheese sauce. Add some finely chopped parsley or green onion greens.
