This bourbon chicken recipe is my friend's idea. But she is too 'chicken' to use my contribution page herself!
But this is such a wonderful recipe, I decided to share it with you myself.
But my chef won’t fall in love with this recipe - he doesn't like bourbon! That’s OK - that leaves more for moi!!
Her daughter loves this recipe, though, and I know you will too!
So let's get started...
2 - 3 pieces of medium boneless chicken breasts
1 - 2 tablespoon olive oil
1 - 2 tablespoons of bourbon (hiccup!)
1/4 cup apple juice
1 tablespoon brown sugar
1 tablespoon of vinegar
1/2 cup water
1/3 cup soy sauce
2 tablespoons of tomato sauce
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1 teaspoon flour to thicken the sauce up just a bit.
Salt and pepper to taste
Wash chicken breasts thoroughly. Dry with paper towels. Cut into medium, bite-size pieces.
Season the breasts with salt and pepper, and cook on the barbecue over a medium heat until lightly browned. As always be sure to keep everything from burning.
Remove chicken and set aside.
Add remaining ingredients in our list above into a small cooking pot.
Start with the more ‘liquid’ ingredients in the list above. Then finish adding the dryer ingredients except the flour because this is for the next step.
Mix well over medium heat. Slowly add the flour to help thicken the sauce. Keep stirring slowly until everything is well mixed and dissolved well.
This whole process should be done over medium heat for 15 to 20 minutes maximum.
Place some chicken on a plate and pour over some of the sauce. Sprinkle with dill, finely chopped.
Serve my bourbon chicken recipe with salad, your choice of rice or potatoes, and green veggies!
