So here's my story:
This chicken noodle soup recipe is one of my favourites. It's very good for fighting colds because of it's natural healing properties!
But it would be doing this recipe for chicken soup a dis-service!
Because this is also good for special occasions like family gathering, weddings, and anniversaries.
500 g chicken breasts or wings for broth
150 g mushrooms
1 onion (this adds a very great taste to the soup!)
1 parsley root
1 celery stalk
3 cups of noodles (the long thin teeny type strips)
1 teaspoon of butter
Parsley leaves cut into small pieces
Black pepper, bay leaf, salt to taste
Wash the chicken thoroughly. Dry with paper towels.
Place the chicken into 3 litres of cold water and start to boil.
As soon as it starts boiling, lower the heat to a minimum so the water just simmers, otherwise the broth is not going to be clear and it will taste awful!
Add all the vegetables. (You can cut them in half first if you wish).
Add the bay leaves and salt. Cook over low heat.
Wash and cut the mushrooms into thin slices and place into the soup.
This next step is important so read carefully!:
This is a secret to the great taste of this recipe!
Cut the onion into slices and saute over medium heat without any oil, or butter until they're golden brown.
Then add this onion to the soup and cook until everything is tender.
In a separate pot, cook the noodles with one teaspoon of butter and salt for taste. Drain with a colander when done.
Back to the chicken pot:
When the chicken is tender (it should split easily when poked with a knife), drain the broth into another pot.
Cut the vegetables from the broth into smaller pieces.
In a soup bowl, place some of the noodles, cover with some vegetables and season with salt and pepper. Then pour over some of the broth.
Add the parsley leaves at the very end, otherwise the vitamins will go away.
You can add the chicken, too, if you like, or use it in one of the tasty salad recipes on my site!
