My easy chicken spaghetti recipe uses only the most basic ingredients. And with just a few extra touches, you can make things really special. (Look at My Chef’s Tips below).
2 chicken breasts
200 g spaghetti
4-5 tablespoons of olive oil
2-3 carrots (optional)
1 medium red pepper
1-2 tablespoons of sour cream
100 g of shredded cheese
6 cherry tomatoes
salt and pepper to taste
1 medium to large size cooking pot
2 large saute (frying) pans
vegetable grater (optional)
First cook the spaghetti according to the package.
That means you’ll use 1 teaspoon of salt and 6 cups of water placed into a cooking pot. Bring to a boil over high heat and add the spaghetti pasta. Boil at medium temperature for 10 - 12 minutes until the pasta is tender but still lightly firm. “Al dente!”
While that’s going on, wash the chicken breasts thoroughly and dry with paper towels. Cut into cubes - about 1 inch square. In a pan over medium heat, add 2 to 3 tablespoons of olive oil. Add the chicken cubes.
Saute until they’re crispy, tender, and have a nice golden colour. Set aside.
Wash the mushrooms. Dry them off lightly with paper towels. Slice the mushrooms however thick you like them.
Then in a second pan, over medium heat, add the remaining olive oil. Saute the cut mushrooms for about 5-6 minutes.
If you like to add carrots, now is the time wash and peel them. Get out your veggie grater and grate the carrots over the mushrooms.
Finally add in the sour cream to the mushrooms and carrots. Mix well.
The spaghetti should be done by now, so drain it in a colander.
Add the spaghetti to the sauteed chicken. Then add the mushrooms and sour cream mixture.
Wash the red pepper. Dry with paper towels. Slice them as thick you like them. Then add them to the spaghetti mix. If you like, you can add a touch of salt and pepper to taste.
Finally add the shredded cheese. Let it melt over the warm chicken mix.
To serve you can garnish your meal cherry tomatoes.
Wash and dry them thoroughly. You can also slice them in half if they’re too large. For final color decorate with finely chopped parsley!
For a more special flavor add spices like rosemary, or Italian herbs, or basil, to name just a few...
And if the season’s right, you can add sliced strawberries on the side of this easy chicken spaghetti dish.
