Why am I making an easy lasagna recipe? With chicken??

My Chef loves pasta. And he was always telling me about trying out a chicken lasagna recipe. I thought he’s crazy! I never heard of chicken lasagna - I’m from Poland remember! ;)

But I thought: why not? I went through my favourite lasagna recipes and came up with this chicken lasagna variation.

Now to really make this an easy lasagna recipe, you can buy and cook pre-made lasagna sheets. There are even oven-ready versions so that you don’t have to boil anything!

Ingredients: (Serves 4 Lasagnas)


500g of lean ground chicken breast
10 sheets lasagna
1 garlic glove
1 medium onion
1 medium leek
3 carrots
4-6 mushrooms
1 zucchini
1 can of crushed tomatoes
4 spoons of tomato paste
chicken stock
Salt, pepper, basil, oregano
Olive Oil (1 - 2 tablespoons)
100 g of shredded cheese of your choice

Sauce:


2 cups of milk
100 g of shredded cheese of your choice
4 tablespoon of flours
1-2 of tablespoon of butter
Nutmeg (just a sprinkle)

Directions for my Easy Lasagna Recipe:


Peel and wash the onion. Chop coarsely. Do the same with the garlic.

Peel, wash and slice the leek, carrot, zucchini and mushrooms.

In a large pot add the olive oil. First add the onion. Sautée on a medium heat for 5 minutes. Let it get a nice light golden colour. This brings out the flavour.

Then add the garlic and stir. I add the garlic later so it doesn’t burn!

Then add the all chopped vegetables. Heat until they are nice and soft.

Then add the ground chicken. I use lean chicken so that the lasagna doesn’t end being overly oily. Sautée. Season with salt, pepper, basil and oregano to taste. Let the chicken brown lightly.

Once that’s done add the tomato paste; and then add the can of crushed tomatoes. Then lower the heat some more.

Add the chicken stock and cover.

Next I’ll start the sauce.

In another pot, melt the butter over low to medium heat. Then add the milk. Stir in the flour and make sure to avoid lumps!

Sprinkle in just a light dash of nutmeg.

Once everything is blended, add some of the shredded cheese. Stir until everything is blended nice and light.

If you're not using oven ready lasagna pasta, follow the preparation instructions for the lasagna pasta you are going to use.

I’ll pre-heat the oven to 180º C/355º F.

And now the fun begins!...


In a baking pan, we start adding the layers.

First will be some of the chicken and vegetable mixture.

Next is a lasagna pasta layer.

Next will be more of the chicken and veggie mixture. This time I’ll sprinkle some of the shredded cheese too.

Another layer of pasta; followed by the rest of the chicken and vegetable mixture; and a final layer of lasagna pasta.

On top of this I’ll pour over that nice cheese sauce I made a little while back.

Top that off with the rest of the shredded cheese.

Bake in the oven for 40 - 55 minutes - until the top is a nice lightly browned colour.

There you have it: an easy lasagna recipe with chicken.

My Chef's Tips:


Serve this with a nice garden salad and, if you like, some vino!
