Chicken and Mushrooms Recipe with Pasta

Oh yeah...chicken and mushrooms recipe. With pasta.

Why am I making this?


I hadn’t had any pasta for a while, so I just decided it would be a pasta day for me. And this dish was so easy to make. Especially with the ingredients being so common and right at hand.

The first time I made this, I wouldn’t let my Chef into our kitchen at all until I was finished. Why?

Simple: I wanted to surprise my Chef!

Surprise your friends too when they pop over unannounced!

Ingredients (Serves 2 pastas):

Fresh Parsley
Fresh Parsley Chopped

2 medium chicken breasts
2 medium white onions
2 garlic cloves
5 medium sized mushrooms
2-3 tablespoon of sour cream
2 tablespoons of shredded cheese
freshly chopped parsley
paprika to taste
salt and pepper
2 cups of dry pasta
2 tablespoons of oil
2 tablespoons of butter


Peel and wash the onions. Cut into small to medium sized chunks. Saute the onions over medium heat with some of the butter.

Peel the garlic. Slice thinly. Add to the sauteing onions.

Wash and dry the mushrooms. Cut into thick slices. Add to the garlic and onions. Stir thoroughly and keep sauteing for 10 minutes over low heat.

Wash the chicken breasts thoroughly. Dry with paper towels. Cut into small to medium chunks.

Place the chicken chunks into a pot. Add some of the oil and butter. Add some salt and pepper.

Saute over medium heat for fifteen minutes. The chicken should be a light golden brown when finished.

Cook your pasta according to the directions on the box.

Place the sour cream in a small bowl and add 2 to 3 tablespoons of cold water.

Stir until well mixed. Once its consistent, add to the sauteing onions, garlic and mushrooms. Stir well and cook for one more minute until smooth.

Monia's Tip:

If the sauce isn’t smooth enough, you can add one to two tablespoons of water and stir for an extra minute. Add a little bit of salt and pepper to taste.

When the pasta is done, remove from heat and drain the water. Place the pasta with the sauteing onion mixture. Then add the sauteed chicken chunks.

Finally sprinkle with the shredded cheese and chopped parsley. Mix well and cook for just one more minute.
