Sorry! I just love sushi recipes!
Why do I like Sushi? Who would ever think that some raw fish and rice could be so delicious.
But this is a chicken recipe site! An easy chicken recipe site. So....
I had this idea:
Why don’t I create a chicken sushi roll recipe?! I’ll use some of my favourite, fresh healthy ingredients like cucumbers and avocados.
Then I’ll portion the ingredients to make it an occasion for two. This way you can share with your special someone.
But I have to tell you: it’s tempting to keep this to yourself. Which I might do anyway - you see my Chef doesn’t like sushi!!
Enough talk! It’s time now to make one of my easy chicken sushi roll recipes! :)
2 small chicken breasts
1 cup sticky rice
1 medium leek finely chopped
1 tablespoon lemon juice
6 leaves of nori
salt and pepper to taste
finely chopped parsley
Wash rice thoroughly. This is important! You should repeat this until the water running through the rice comes out clear.
Place the rice in 2 cups of cold water with one teaspoon of salt added. Bring to a boil and then cover and simmer for 15 minutes.
Then remove from heat and let stand.
Next wash the chicken breasts. Drain on paper towels. Sprinkle with salt and pepper. Sauté in a pan over low to medium heat until golden and tender.
Then remove the chicken from the pan and cut into small pieces.
Boil some more water so that you can blanch the nori leaves. You do this by quickly dipping the entire leaf in the boiling water and immediately removing. This intensifies the colour of the nori leaves and keeps more of the vitamins.
Lay the nori leaves out over a cutting board and stretch them carefully without breaking them apart.
Peel the cucumber completely. Cut into long straw like shapes.
Next, peel the avocado. Cut in half and the remove pit. Cut the avocado carefully the same way you did like the cucumber.
So now we have our nori leaves laid out on the cutting board.
Over the nori leaves, lay down some rice, chicken, cucumber and avocado in a center line in the middle of the leaf. Fold the lower half of the leaf over the ingredients, and then roll the rest over until it’s wrapped around like a long tube.
Now squeeze gently to remove any excess fluid and to make everything pack together more nicely and firmly. Place on another cutting board and cut into sections.
Repeat with the rest of the ingredients until everything is used up!
To serve, place the cut rolls on a plate over some lettuce maybe, as a base. Pour some soy sauce lightly over the rolls. Garnish with the chopped leek and sprinkle with parsley.
Appearance with sushi is everything. It’s an art.
