With this sundried tomato recipe, it’s no secret that my Chef loves pasta.

But....

He does not drink wine or eat sour cream....Well - that’s fine!! More for me!




I love adding wine when I’m cooking because it adds a special flavour. Especially to this dish.

And....

I’ve also included thyme and rosemary, which goes great when making chicken. It helps digest your meal and will help your body stay in great shape too.

So what else has inspired me to make this wonderful and delicious recipe, besides my Chef’s love of pasta, and my love of chicken?

I love tomatoes, rosemary and spinach.

So when I did my grocery shopping I bought rosemary and spinach and there you go!

We’re ready to go!

Ingredients (Serves 4 sundried tomatoes):

4 medium boneless skinless chicken breasts
2-3 tablespoons oil
1 cup sour cream or light yogurt
1 cup water
¾ cup white wine
½ cup chopped sundried tomatoes
2 cloves garlic, minced
1 tablespoon chopped fresh thyme and rosemary
1 cup dry pasta
2-3 cups of fresh spinach (contains a lot of iron)
salt and pepper to taste
1 tablespoon of fresh chopped parsley

Directions:

Wash the chicken well. Dry with paper towels.

Cut into bite size chunks. Season with just a bit salt and pepper.

In large skillet, heat oil over medium-high heat and saute chicken completely for 3-4 minutes. It becomes golden brown and crunchy. This is what it should be.

Stir in sour cream, water and wine until combined. Mix everything really well.

Add the sundried tomatoes, minced garlic, thyme, and rosemary; and continue stirring. Bring to a boil.

Lower heat, cover the skillet and simmer for about 15 minutes.

Meanwhile, cook pasta until it’s tender but firm. Follow the instructions on the pasta’s box.

Back to our chicken and tomatoes: uncover, stirring occasionally for 5 minutes, or until sauce is thickened enough.

Stir in spinach and cook for another 3-4 minutes.

Mix well and we’re done!

Serving Suggestions:

Just put some on a plate and enjoy!! Of course a little salad is always nice with any dish...

It’s worth it to take the time to make this sundried tomato recipe with chicken and pasta.
