Well I have a much, much better idea!

How about...



...a lovely meal next to lake?


When it’s nice outside and the warm weather invites us outdoors, we can bring some great food and spend some quality time far away from all the city's noise and stress.

I have done that with my Chef too, many times as you can see by our lovely pictures.

Believe me you can do this too!

This recipe is perfect if you have some leftover chicken handy.

The best thing about this recipe is you can actually vary the amounts to suit your occasion!

So let's get started:...

Here’s the recipe my Chef and I shared last time:

Ingredients (Serves 2 bored people!):

baked chicken breasts
1 medium green leaf lettuce
1 small bunch of spinach
½ cucumber
8 cherry tomatoes
3 green onions, chopped
2 cloves of chopped garlic
1 tsp thyme
1 tsp rosemary
1 tsp basil
salt and pepper to taste
blueberries
My Chef’s Salad Dressing

Extra Touch!...

Bread rolls
Butter
A little vino!

Directions:

Pull apart the lettuce. Wash and dry all the leaves.

Chop the lettuce coarsely into bite sized pieces.

Place in a large salad bowl.

Do the same with the spinach.

Wash and slice the cucumbers. I don’t peel them so that all the vitamins are retained under the skin. Place into salad bowl.

Chop the chicken into small pieces and place in bowl

Wash and slice the tomatoes in half - if they’re large enough and place into bowl.

Add the remaining ingredients and spices. But leave out the blueberries! And the bread rolls, butter, and vino of course!

We add the blueberries when we serve everything.

Finally toss all the ingredients in the salad bowl.

Serving:

I filled two bowls with a healthy serving of the salad we made. I covered them with plastic wrap I then placed the wrapped bowls in a plastic container to keep everything in place when we carried in our picnic bags.

We also put the blueberries, some bread rolls, butter, some eating utensils, and glasses! Because: I always like a little wine to complete the meal!

I took my Chef by the lake where we found a nice empty table to set up our dinner.
