Pineapple Chicken Salad:
Not Only For Ladies Night Out!

This pineapple chicken salad recipe doesn’t need any special occasion for you to make it!

However....this time it was going to be just that. A special occasion.....only for the ladies! (That’s right - without my Chef). You know - just the girls getting together for a night out for some fun...!





You know what happens at a girls night out? Don’t you?!

Well anyway, this night started out at my place when I served this special salad.

You can do this too, but...added attractions aren’t included in this recipe. You’ll have to supply your own! ;)

Ingredients (Serves 4 Ladies):

¼ roast chicken
4 slices pineapple
1 cup of cooked pearl barley
1 small can of peas
1 cup prunes
½ corn
2-3 chopped nuts
bunch of dill

Ingredients for the sauce:

4 tablespoons lemon juice
4 tablespoons pineapple juice
1 teaspoon mustard
icing sugar for sprinkling
1 tablespoon finely chopped parsley
salt and pepper to taste

Directions:

Cut the roasted chicken into strips.

Next, at the bottom of a salad bowl place the cooked barley and roasted chicken strips. Surround them with the peas, prunes, and the pineapples.

Cover with foil. Set aside in the fridge for 2 hours.

Combine the oil and lemon in a small bowl. Whip the oil with lemon juice with a whisk to get a thick liquid.

Add the pineapple juice and mustard. Season with a dash of powdered sugar, salt and pepper to taste.

Bring out the salad from the fridge and add the corn and nuts.

Rinse the dill, dry, and chop finely.

Add the chopped dill and parsley to the salad.

Pour over the sauce and mix everything thoroughly.

My Chef's Tips:

Because my Chef wasn’t allowed to my ladies night, he wasn’t allowed to give any tips. But really...what more would you need when you have a dish like my pineapple chicken salad
