Why will this king ranch chicken recipe be so very popular with you?

Well:

It's very tasty!

And it's very easy to make!!

But that's true for all the recipes on my site, if I do say so! :)

So why will it be popular with you?

For the same reason it's popular with my Chef: When you’re finished eating this delectable dish, you’ll become a King!

OK I know, that's not possible! But at least you’ll feel like a King (or Queen).

How about that? :)




Ingredients (Serves 6 ranches):

6 chicken breasts: boneless, skinless, cooked and chopped
12 corn tortillas cut into quarters
1 medium onion
1 red pepper
100 ml of sour cream
150 ml chicken broth
garlic powder to taste (or 1-2 garlic cloves, finely chopped)
Salt and pepper to taste
1 small can diced tomatoes
4 tablespoons of grated cheese (your choice)
1 tablespoon of finely chop parsley

Directions:

Preheat oven to 350° C.

Wash all the veggies.

Peel the onion. Chop the onion and pepper into medium pieces

Wash the chicken and dry on paper towel

Pour about 1/3 cup of broth over the bottom of a baking pan. Then layer half of the tortilla quarters on the bottom, followed with some of the chicken, onion, red pepper, and sour cream.

Sprinkle with a little garlic, salt, and pepper to taste

Repeat the layers: tortilla quarters, chicken, onion, red pepper, and sour cream. Sprinkle again with garlic, and just a little bit more salt and pepper

Spread the diced tomatoes over top and drizzle with the remaining chicken broth.

Finally, sprinkle with cheese and follow that with parsley.

Cover with foil and bake for around 50 minutes.

Serving Suggestions:

So what do we serve with our king ranch chicken recipe?

Just like my Chef: Serve with a nice healthy garden salad.
