You simply can’t resist falling in love with this creation! I can’t; your guests won’t.....
Even my chef won’t resist - right Chef?!....
200 g of cooked chicken
100 g of pasta cooked according to package directions
3-5 pieces of cooked artichoke
1 tablespoon of minced fresh rosemary
2 garlic cloves
1 medium onion
3-4 medium mushrooms
1 tablespoon of fresh dill, chopped
1 tablespoon of fresh parsley, chopped
1 tablespoon spoon of dried tomato
½ of tablespoon of a wine vinegar to taste
2 tablespoons of lemon juice
1 tablespoon of oil
1 tablespoon of mustard
salt and pepper to taste
50-100 g of grated cheese at your choice
Peel the onion. Wash and rinse well. Peel the garlic. Chop the onion and garlic, coarsely.
Wash mushrooms, and cut into slices.
In a bowl, combine all the non-dressing ingredients. This will include the: rosemary, garlic, mushrooms, onion, dill, parsley, dried tomato seasoning, cooked pasta, cooked artichokes and chicken.
In a different bowl, create the dressing. Mix together the wine vinegar, lemon juice, oil, mustard, salt and pepper, with a whisk until it thickens.
Pour over the salad ingredients and toss well.
Finally, sprinkle the grated cheese over top of everything.
For an extra lightness, especially during summertime, add some chopped romaine or red leaf lettuce to our chicken pasta salad!
