How is an easy chicken pot pie recipe even possible? Is there even such a thing as an easy pie recipe?
Why should you make one?

It really is more fun than you can imagine!
450 g of chicken breasts (without skin)
2 cups flour
200g of butter
pinch of salt
1 teaspoon baking powder
1 tablespoon sour cream
large wooden spoon
large skillet (saute pan)
fork (for poking holes!)
Preheat oven to 180°C/355°F.
In a medium size mixing bowl add the 2 cups of flour.
Then one by one add all the ingredients for the pastry together to form the dough.
I start with a large wooden spoon, then, when everything is lightly blended, I finish working the dough with my hands. Finally I separate it into two balls.
Using a rolling pin, roll out both dough’s into the shape of your baking dish. My dish is oval shaped, so the dough is going to be the same type of shape.
Place one of the flattened dough balls in the baking dish. Pierce the flattened dough several times with a fork. This helps the dough to rise when baking.
Cut chicken breasts into slices with a thickness of about 1 cm.
In a large skillet heat oil, and sautée the sliced leeks until they become soft.
Add chicken slices and sautée for 1 minute on each side. Lightly season with salt and pepper to taste.
Next add the mushrooms and lemon juice. Reduce heat and let simmer for 3 -5 minutes.
Add the water and milk…
Mix everything well. When it begins to boil and thicken, remove from heat. Quickly stir in beaten eggs and nutmeg. Let cool slightly.
In the baking dish you laid out the flattened dough, pour the pot pie filling.
Sprinkle with the grated cheese - we’re almost done; isn’t this great?! :)
Cover everything with the other dough piece and knead pieces together at the edge. Poke some small holes through the top to let the heat escape while baking.
Bake for about 25-30 minutes until the filling becomes firm and consistent.
This easy chicken pot pie recipe is a meal in itself. So you can leave out side dishes if you like. But like my Chef says, a nice light salad will start off the meal in an elegant way!
