Ready for a simple boneless chicken breast recipes?

Here is a very elegant one. This comes with tomatoes and basil. You and your partner will say just one word: WOW!

I love this! You will as well. I promise.

It’s so very tasty, especially as a dinner for two!

But I’ll let you in a little secret:....





...you can serve this for any occasion and no occasion at all. It’s that good. Have it today if you want to - just for yourself!

So here we are. A chicken breast recipe with Wow! With tomatoes and basil, of course....

Ingredients (Serves 2 tomatoes!):

2 boneless breasts of chicken
250 g fresh tomatoes
1 small onion
1 small clove garlic
2-3 tablespoons oil
15 g butter
1 tablespoon chopped basil
salt and pepper to taste

Directions for Boneless Chicken Breast Recipe:

Preheat oven to 180°C/350°F.

Wash the chicken breasts thoroughly.

Washing the Chicken Breasts

Dry them with the paper towels.

Wash all your veggies before you chop them...your onion, your peeled garlic, tomatoes and basil.

Chop the onion and garlic. Sautée them in a pan with oil over very low heat.

Add the basil. Season with salt and pepper. Continue sautéing for about 12-15 minutes.

Cut the chicken breasts into slices and place them into a baking dish. Coat the breasts with butter and bake, covered, in medium heat (180°C/350°F as I mentioned above already) for about 15-20 minutes.

Remove breasts from oven and keep the lid on. Or you could cover them with a kitchen cloth instead, if you like, and put aside. (Either way this keeps them warmer longer).

Peel the tomatoes.

Pour the tomatoes in the pan with the your onions, basil and garlic, and sautée for around 5-7 minutes.

When that’s done, pour the tomatoes over the chicken breasts and let the two flavours mix for just a bit (1-2 minutes).

My Chef's Tips:

To complete this simple but special meal, serve with rice and mushrooms, and a nice simple salad.

And as always, when you’re serving this up for two, be sure to include your favourite wine.
